Strawberry Wine.

Strawberry Wine. was created by Dullahan Brewing
4 litres Aldi White Grape+Eldeflower Juice

500 ml Ribena Strawberry

600 grams table sugar

1tsp Pectolase

1tsp Glycerine

1tsp Citric Acid

Vintners Harvest CL-23 Wine Yeast


Boil 2 litres of the grape juice and 500ml of the strawberry ribena in a pan for ten minutes on a rolling boil, add the sugar during this boil time to dissolve.

Pour the other 2litres grape juice into a clean demijohn and pour the cooled down mix from the pot on top of this.

Throw in your pectolase,citric acid,glycerine and shake well to mix. Pitch yeast once 25 celsius has been achieved.

After 2-3 days primary fermentation top up to bottom of neck with more grape juice and leave a minimum of 3 weeks total in primary.

This has turned out more of a desert wine definitely no back sweetening required.

Strawberry wine bottled, topped up with cranberry juice because its what i had at hand. Glad i did as it balances out the strawberry nicely.

Brewing a familiar Dark Mild later today. (hint: Was the bastard tired? Or was he run over by a tire (tyre). No one really knows). One thing for sure. It will be a treat when done. Cheers!
