Hi there,

I started a lager/pilsner brew some time ago now and didn't end up having time to bottle before going on holidays. So I left the brew layering at zero degrees in my fermenting fridge while on holidays. In total the brew has been fermenting for 4wks and then layering for 8 wks.

My question is do you think my yeast (Saflager W-34/70 Lager) will still be ok for me to use for the carbonation when bottled? Or will I need to pitch some more yeast? Hope I have given all the info that is required for some help. If not just yell out.

G'day mate, hard call since it's been at zero degrees, it's probably fine, but if you had of said 3 months I would've said to pitch more yeast, so you are on the cusp. It won't hurt to add more. It's really up to you.

Cheers for the quick reply Gash. I have some spare yeast sitting in the fridge so may as well put it in to make sure I definitely get some carbonation. I would be a bit pissed if I have wasted my time for the past couple of months.

As the beer is still sitting at zero deg. should i raise to 10 deg. C so the new yeast I add doesn't get to much of a shock?
