Hard to stray from my dependable US 05. Works so well in all my favourite styles.

My amber was 87% to FG in 3-4 days. Cleaning up diacetyl now. I feel like I could almost package it after 7 days but might wait a bit longer to make sure she's done.

Bottled this today.

Holy shit does it taste good! Only thing I changed was I upped the dry hop to 70grams each citra and mosaic to get it to around 6g/L dry hop, maybe a touch over. Taste like a big west coast IPA.

In bottle now carbing up. Tried to restrict any splashing whilst bottling and squeezed all the air out of the bottles.

This pic is from the end when I tipped the fermenter up to get the rest out for a reading and a taste. Looks like it finished about 1.011, about 6.5ABV.

Hopefully carbs up well and didn’t get oxidised during bottling.

Finn my man, just tried this IPA and damn is it good. Thanks for the advice. Best beer I have made by far. Big and fruity and delicious and very clean. Hops coming through great. Cheers mate hope you’re drinking something nice!

Hahahahaha that’s right. Lucky floor. I took a few but the iphone camera in the dark doesn’t do it justice. I’ll take some more tomorrow or Sunday. Not even 2 weeks in the bottle yet but carbed up and nice. Will only improve although it’s damn good now so not sure how much better it can get.
