Hey all,

What do you think of this recipe?

Had a Pale ale from a local brewery here that had this hop combo and was amazing! Wanted to use for inspiration but punch it up into IPA territory.

Went for a lot of late hop additions to get most of my IBUs. Is this too much late hop additions? Also went with a mix of 2 row and pilsner malt to highlight the hops but any advice on the grain bill is appreciated.

Ferryman is just a working title, was the name of the PA I got the hop combo from.

66 Total IBU
BU:GU 1.08

3KG Pale Malt/2Row
2.5KG Pilsner malt
500g Light Munich
350g Light Crystal (100 EBC)

10g Chinook (13%) @ 60mins 12.3 IBU
15g Citra (12%) @ 10mins 9.5 IBU
15g Mosaic (12.3%) @ 10mins 9.7 IBU
20g Citra (12%) @ 5mins 10.2 IBU
20g Mosaic (12.3%) @ 5mins 10.4 IBU
20g Citra (12%) @ Flameout 7.1 IBU (10min hopstand at 98c)
20g Mosaic (12.3%) @ Flameout 7.2 IBU (10min hopstand at 98c)

Went with the Hoppy water profile on brewfather

Looks like a gooden. I like the way you hav nt overloaded the hops additions/ quantities. Also really like the grain bill. I would have added 200g of wheat malt, but thats just me lol. Cheers and thanks for posting.

Might try the wheat as well, although she is already getting to the grain bill limit for the brewzilla.

Does the wheat just add mouthfeel? A bit of flavour?

Good question, for me it adds an X factor to my brew. It just seems to tidy up the beer. How can I explain it. Head retention is good, mouth feel is better, and a general aroma that says yes. I always add wheat to all my brews now, it just seems to add something special and finish or round off the over all quality of my brew. With my Pale i add 200gms of wheat malt and with my dark i add 200gms of roast wheat malt.
And 200gms is not much but i love it. its has been a TURNING POINT IN MY BEERS.Sorry didnt mean to shout.
Brew without and then brew with and see what you think, thats the best way.
To answer your question, yes i think it does add mouth feel and a bit of flavour. Just a bit to give you that mmmmmm factor. Cheers mate.

Well you’ve sold me Finn. I’ll add the wheat this time and then next time I do the recipe I’ll do it without and compare. Do your pale end up hazy with the wheat? Not that it bothers me if it is just wondering.

Gonna be an interesting mash on the 35l brewzilla. I think I’m pushing the limit of what it will fit, not crazily I don’t think but on the heavy side.

Might have to give it a few stirs or something. What do you think? Anyone done a grist this size? I can always add a bit of sugar I suppose if my efficiency is down.

Also what yeast would you use? I’ve got some of the Lallemand verdant ipa and the Voss kveik coming from KL.

I was gonna maybe save the verdant for NEIPA but may go well in this. Voss I’ve heard is very clean but never used so may have funny flavours. Should I Just go US 05? Has anyone used the verdant or Voss from lallemand?

My beers clear out quite nicely, little bit of haze sometimes but the longer it stays in the keg the clearer it gets. I had a wheat beer hefe that ended up very clear ( have a look at one of my videos ) Ive just started using a bit of jellotine in my kegs and the clears up real quick. But dont worry about that now.
As far as yeast goes, im a us05 fan. You could say its my house yeast. And as the brewer at my local brewery says, Its an absolute work horse lol. But up to you of coarse. Cheers mate, looking forward to your report.

Yeah us05 over Voss for an ipa, you can brew an ipa with Voss but I’ve found results mixed, some great ones, some not so great. I think you have to “cover up” the Voss flavour sometimes Cheers!
