I'm often questioned about my short drying hopping schedules, I read this a couple of years ago, tried it and I really like the results so I only dry hop for 3-4 days, although I leave them in for the two day crash chill as well. Basically most aroma etc is extracted from the hops in about 6 hours, and at 4 days starts dropping. This is for pellet hops. Thanks to Peter Harold Wolfe for all the hard work!

Thanks - This is a great read with some useful insight.

I also noted section - 1.6.1 Packaging and its potential ability to scalp dry-hop flavor

I've been considering a Stainless Steel fermenter for this reason.

Has anyone had any experience with these? www.ssbrewtech.com/collections/fermenters

Bought one and christened it yesterday. I'll let you know how it goes.

Initial thoughts observations though are that it is much easier to close that plastic lids.

I am most interested in the finished product though. I made a variant of your hightail ale recipe so hopefully it turns out well and has that extra bit of hop bounce.
