Mum's Ginger Beer. was created by Dullahan Brewing
1000 grams course grated ginger
2000 grams table sugar
1000 grams of honey
juice of 6 lemons
EC-118 Champagne yeast
Heat 14 litres of water to boil, add all ingredients and boil for 10 minutes
cool to pitching temp approx 70 degrees.
Add to primary top off with water to 20L mark
Pitch yeast
My OG was1.052 at 112 degrees
FG was .992 at 73 degrees
I bulk primed with half cup of honey and 1 cup of splenda
I would add more unfermentible sweetener to the bulk prime as i found it needed just a bit more sweetness. perhaps 2 cups of splenda.
Nick has also used Xylitol for back sweetening with great success.

Kit Brew Day Tomorrow, Black Rock Pale ale and number 40 larger brew enhancer by mangrove jacks. And possibly some honey. Yeast US05 ??
