Nottingham yeast taste was created by Finnroo
Hello , Yesterday i tasted a pale ale i brewed and fermented with Lellemand Nottingham yeast. I fermentented it at 18 degC for 8 days with a final gravity of 1004. I mashed over 2 days with a final mash temp of 32 degC. The OG was spot on at 1044.
The taste was very fruity and very slightly tarte, in a good way its very nice.
Im picking the low FG is because of the long mash lowering mash temp.
I only used 50grams of Fuggle hops, 10 at first wort 80 min 20g at 20 and 5 min.
Im not ruling out slight infection but i dont think so i m very careful with that side of things
Its very nice, but im wondering if other people have found this with this yeast. Cheers takecare.

Always found that the Nottingham yeast ferments out low. Usually end up about 1.008. If it tastes nice, all is well in the world.

Lucky that mash didnt sour or something, cant remember my schooling on mash, I must refresh my head lol.. 2 day mash! thats long one! but if everything tastes good its all that matters , cheers!

Thanks for your replies guys. A sour mash, never heard of it but yep that what it will be. Its fruity and slightly sour, very drinkable but something different going on. Ill brew again maybe this week and same recipe, just mash over night as my normal. Thanks very interesting, cheers.
