One of the first brewing videos I watched was Gash's chocolate and vanilla stout and love the idea of it. Can it be done with vanilla extract instead of pods and if so how much would I use.

Sure you can, but how much is just a guess, they all vary in strength. I'd also get a true vanilla extract and not one of the cheap ones. You can try and test in a glass of beer and a couple of drops and try and up scale it your whole batch. Cheers!
