Trying Out an Alpha Pale Ale clone, Got some info from Matilda bays website and also had a look over some other recipes for addition times and intervals.

Matilda Bay Alpha Pale Ale

Brew House Efficency: 80% (This is what the Recipe was built on Adjust if yours is lower)

Batch Size: 27L
Est OG: 1052
Est FG: 1011
EBC (Color): 19.5
Est ABV: 5.4%

Grain Bill
4700g Pale Malt, JWM
400g Wheat Malt, JWM
200g Dark Crystal, JWM
250g Crystal, JWM

Hop Scedule
25g Pride of Ringwood, 9%aa @ 60min
30g Amarillo Gold 8.5aa @ 20min
30g Cascade 5.5aa @ 15min
30g Amarillo Gold 8.5aa @ 10min
38g Cascade 5.5aa @ 5min
30g Cascade 5.5aa @ 1min (10 Min Steep)

Adjuncts
1 Irish Moss Tablet @ 15 Mins

Yeast
1pkt Dry Pitched Safale US-05 @ 18c

Mash Profile

Mash in 14.5 L to Achive 67.0 c Mash (75.6c water)

Mash for 60 Mins @ Around 67c

Mash Out add 8L of water to the Mash to Achieve 75c (92.3c water), Stir Gently and rest for 10 Mins

Drain First runnings, Recirculate the first 1-2 L in a jug to let grain bed set

Sparge with 19 L of water at 75.6c, Stir Gently and rest for 10 min

Run off 2nd runnings Recirculate 1-2L in a jug to set bed again.

Boil
70 Min boil, Once Boiling i give my wort time to regulate itself after the hot break about 10 mins then i will start the 60 min addition and follow with the rest.

Fermentation
Ferment Until it has slowed fermenting approx 5 Days at 18c then add Dry Hop additions for a further 4-6 days.

Bottle/Keg to 2.2vols

Hi Gash,Just like to say that the site is great like the demos. I am thinking about doing this recipe in halve size due to not having all the right gear for a.g brewing yet .I have a esky mash tun and a 19 lt pot. Can you tell me your thoughts any any problems i may come across. Cheers Brad

G'day mate, what size is your mash tun? we should just get away with a half batch with a 19ltr pot. I haven't made this recipe myself this was a M3tal_Brewer , a member here, recipe, but I can convert it for you.

Just gave this a nudge. I replaced the Pride with Citra for a 65 IBU finish. I had a much higher than usual 1.016 finish so i'm glad i went higher on the bitter as it now taste more like a 45-ish IBU beer. I has tried increasing my mash temp to 68 deg C to try an eek out some more efficiency with no benefit sadly.

Its been in the bottle for 3 weeks at 18-20 deg C and first tasting was a day cold conditioned. Was fresh and not as clear as normal but I made allowance for the Wheat and lack of cold condition. Its has had 5 days now cold conditioning and is getting better everyday since. Appearance is cloudy (again the Wheat) but G its a yummy brew. If your looking for something closer to a red or amber then this is very close or at least my version resembles amber and red IPA. I'd brew again
