So , I have been working on my mash ph and salts for about 6 momths now and starting to understand how it all comes together. My numbers are well within spec for all but Magnesium which is very low here in chch. Im keen to add just a pinch of mag to bring it into spec, .What would you recomend. Mg is 2ppm and i need it to be 10 -30 ppm.
Im not keen on adding any sulphates etc. Any advise welcome, cheers takecare.

My water is probably totally different , but I add about 5g to the mash each batch. My mash is usually 18-20L

Did a Very nice brown ale last month and brewing it again tomorrow. It has 6 different malt and it was very good. When i mashed in the ph was 5.0
I want to bring it up a bit to 5.2 to 5.4 ish so have got some calcium carbonate to add to the mash. On the fly im guessing around a teaspoon to see what happens, but my question is what sort of flavour profile will it add?. eg Cacl2 adds roundness to the malt and CaSO4 adds perceived bitterness to the brew. Just trying to avoid the ol acid reflux in the middle of the night lol

PS remind me please is ph of mash taken at 20 deg or mash temp in the tun.?

So just to answer my own question about the ph meter, it says on the inside of the box, environment 0_50 deg. So i need to take a sample out and cool it down to anywhere under 50 deg and should be fine. I will take a reading before and after cooling just to see. cheers.

So moving forward, mash went well. Before adding CaCO3 to my mash which already had a small teaspoon of Gypsum to ph was again 5. Added 1 small teaspoon of CaCO3 and it didnt go up so I added another one and it went up to 5.4 because i let it cool below 38degC.
So cooling sample to below 38degC gave me a good reading and next brew will only need to add one small spoonful. ( i use the ol kentucky fried chicken red plastic spoon lol)
